Battle of the staff room....

So being back at work, working shifts is only hard if I don't plan it right. I like to plan my meals in advance either the day before or a few days before my shift depending on what im eating. If I don't I would fail misserably. It's becoming a daily battle of the staff room for me. Plates of cakes, iced cupcakes, biscuits, sweets given from the community. I'm just glad I plan my snacks now too. It's hard for me to get that extra meal in at work as I only have two breaks. Hopefully Il come up with something, as I don't want to feel ravenous by my second break.
Saying that , eating my lunch always raises a few eyebrows. I can see they drop there heads down and say "oh that looks healthy" . Which is fine but I'm hearing it a bit too often its becoming old news. I'm proud to be healthy. My meals are far from dull, last week it was so hot so I ate lots of salads.feta cheese, heartily, peppers and green leafy salad with squeezed lemon and some humous goes nicely. Then other times Il invent new dishes when I have time. My fave is rosemary,garlic and oregano sweet potato chips with lemon chili flavoured chicken with lots of green veg. The Sun has been out and its been very hot, this time last year I was two months away from giving birth to my son.I was limited to what I could wear. The year previous to that I just wore the same old thing. No matter what I wore, in what ever colour I still looked like a walking 4 man tent. I'm so thankfull this year, I've brought new clothes, colours and patterns. Everything I have worn so far I'm thankfull of. I'm feeling cool, showing skin and feel like a woman should....sexy. Its such a nice moment when all your washing hanging on the line is like a rainbow rather then black. I even brought myself a pair of those tight lycra leggings that people wear to workout in. Oh my! It's not so long ago that I remember looking at the skinny minis thinking god I'd love to get away with wearing them! The size 16 ones I brought are too loose!

I found this recipe and i thought id share, its a nice snack to have. They remind me of bombay mix. you can flavour these in any flavour/spice to suit you.

Ingredients

  • 1 (12 ounce) can chickpeas (garbanzo beans), drained
  • 2 tablespoons olive oil
  • salt (optional)
  • garlic salt (optional)
  • cayenne pepper (optional)

Directions

  1. Preheat oven to 450 degrees F (230 degrees C).
Blot chickpeas with a paper towel to dry them. In a bowl, toss chickpeas with olive oil, and season to taste with salt, garlic salt, and cayenne pepper, if using. Spread on a baking sheet, and bake for 30 to 40 minutes, until browned and crunchy. Watch carefully the last few minutes to avoid burning.
i cooked mine in coconut oil and used paparika and chilli.They have a crunchy texture.

Heres a couple more meal ideas as promised.
Roasted chicken flavoured with lemon,chili and sweet potato wedges in oregano,rosemary and garlic with lots of brocolli and kale.
This was my own homemade icecream. great recipe to tryout different combinations , mine was orange,lime and cuecumber blended. then few sunflower seeds on top. You could try mixed berrys and almonds. However dont leave in the freezer for too long as it will become hard as nails!
Vanilla Greek Frozen Yogurt
2 cups full fat  plain Greek yogurt
1/4 cup honey
1/2 teaspoon pure vanilla
Stir together Greek yogurt, honey and vanilla. Cover and refrigerate at least 1 hour until well chilled. Freeze in an ice cream maker according to manufacturer’s directions.
For a soft serve consistency, serve immediately. For a firm, scoop-able consistency transfer to a freezer container and freeze until firm. (Homemade frozen yogurt, especially low fat frozen yogurt, freezes very firm. To serve, let the frozen yogurt soften at room temperature for 10 to 15 minutes or until soft enough to scoop.)
Makes about 1 pint (4 servings)

*Dont forget  you can add any fruit ect and make it truely your own. Lovely for a hot day!*
